Method

    MixCombine flour and water, let rest (autolyse) for 30–60 minutes.

    Add starter and saltMix thoroughly until incorporated.

    Bulk ferment4–6 hours at room temperature, with 3–4 sets of stretch and folds in the first 2 hours.

    ShapePre-shape, rest 20 minutes, then final shape into a boule or batard.

    Cold proofPlace in a banneton and refrigerate 12–16 hours.
  6. 06
    BakePreheat oven with Dutch oven to 500°F. Score the loaf, bake covered 20 minutes, then uncovered at 450°F for 20–25 minutes until deep golden brown.

Let cool at least an hour before slicing — it’s still cooking on the inside.
